My future-ex Donald was supposed to come over to watch the Giants-Green Bay Packers game, so I promised him your The Zen Master’s Apple Pie for some good karma to go with the game. And just like your friend Bubby (Bubby’s Pie Co.), he didn’t show. As the game went into overtime, so did my hunger pangs, not to mention my irritability. Finally, I turned on Turner Classic Movies and settled down to enjoy a little karma of my own. Okay, a lot of karma– like almost half the pie.Naturally then Donald did call, begging forgiveness because he had to go to the pet emergency room, and didn’t have his cell phone, but thank goodness his cat would be okay, and could he please come over because the only thing that kept him going at the CatHouse Veterinary (should I even be wasting my time?) was the thought of my freshly baked apple pie.What could I say? But worse, how would I explain the half-eaten pie? Well, don’t be so mad at Bubby because he saved the day. I went straight to his book,(”Bubby’s Homemade Pies”) and found a technique for rescuing half-eaten pies. He calls it “pandowdy” and you can do it to any pie that’s in trouble. After the pie is fully baked, you let it cool, chop it up in the dish, and bake it again. The most traditional pandowdy is made with apple and molasses, and Bubby tops his with a sprinkle of cinnamon and sugar. So that’s what I did. And Donald loved it. He didn’t even notice the dish was half full. But then he’s so full of it himself, how could he?
