”Okay, Trish, let’s not get crazy. There are low carb solutions, like curbing your carbs by using a nut crust instead of the traditional flour filled variety. Almost any nut will do (it’s like dating). Try almonds, pecans, walnuts, or hazelnuts.”
Low-Carb Nut Pie Crust
- 2-3 oz nuts
- Unsalted butter, softened. Enough to generously brush the bottom and sides of a pie pan
Finely grind the nuts in a food processor
Butter the bottom and sides of your pie pan. Be generous. (Low fat is another story)
Press the nuts onto the pie pan so they stick to the butter, forming a crust
Use with any custard-type filling
